Today is the first full day of summer! Finally it’s time to fully shake off that winter hibernation and get outside and do stuff! Now is the time to enjoy lazy days at the beach with the family, nighttime fires making s’mores with your buddies, and of course cookouts with everyone!
Every family has their own staples that they serve at summer get togethers. When I started going to my in-laws holiday BBQ’s, I was introduced to a fruity side dish known as ambrosia. Homemade whipped cream surrounds pineapple chunks, mandarin oranges, cherries, and mini marshmallows. The fruits literally burst in your mouth to have their juice combine with the whipped cream that has a hint of vanilla. Literally every summer I look forward to this! When I found out that my husband knew how to make this, it was almost a dream come true! With the Fourth of July coming up, I hope it will make it to a few of your picnic tables : ).
3 Mandarin Oranges
10 Oz jar Maraschino Cherries
1 Pt Heavy Whipping Cream
2 Tbsp Sugar
2 Tsp Vanilla Extract
Make homemade whipped cream by pouring the heavy cream, sugar, and vanilla into a medium mixing bowl. Using the mixer of choice, blend the ingredients on medium until the cream is fluffy. Adjust the sugar and vanilla to taste and it’s done. That’s it. I’ll never look at cool whip again after having home made whipped cream!
Now for the complicated part. Stir in the fruit and marshmallows. The only tricky part is to make sure all the whipped cream is mixed in from the bottom. Once that is all set, cover and chill in the fridge until it’s time to serve!
Now, this isn’t healthy in the sense of calories, but it is all natural, so that counts for something! I haven’t met anyone who hasn’t liked this dish, so it’s sure to delight everyone who tries it. I personally like it best with the citrus fruits, but a berry combination might work too. What are your thoughts? Leave a comment below!
